Barrel Aged: Aged for 18 months in cedar barrels, like a fine wine or sake... creating deep umami flavors.

Umami Experts: Brewed with an heirloom recipe passed down over generations (since 1871!). They know what they're doing and aren't messing around.

Brewed in Japan: Handcrafted in the heart of the Chita Peninsula of Japan, renowned for its ideal weather conditions for brewing Tamari.

2X Soybeans → 2X Flavor: Jozo is brewed at a 2X soybean concentration. The result is an umami bomb – sophisticated bold flavor.

Meet Oliver Martin & Julia Morrison

Julia was diagnosed with Celiac Disease in 2017. She is a foodie that loves to explore, and celiac has helped her to explore more within her own kitchen. You can find her mixing up a mean marinade or plating a perfect poke bowl. As a celiac founder, Julia's dream is to provide gluten free customers an option better than the glutenous one.

Oliver is a flavor seeker, frequently experimenting with interesting flavors and cooking up a storm in the kitchen. You can find him next to a grill or smoker making more food than necessary, with the exact amount of flavor necessary.

We find ourselves constantly reaching for one key ingredient - soy sauce!

After discovering the beauty of barrel aged soy sauce, we set out to create a gluten free variety that Julia could enjoy.
