Our founder is pre-diabetic. She wanted a cookie she could have every morning — half a cookie, mindfully, with her tea — without the blood sugar spike that comes with a regular store-bought cookie. So she made one.
Every ingredient was chosen deliberately, working with a chef over months. Millets for their naturally low glycemic impact and gluten-free profile. Organic dates as the only sweetener — no refined sugar, ever. Most gluten-free products reach for potato starch or gums as binders — you won't find either here.
The lemon is intentional — bright and citrusy, balancing the earthiness of the millet without overpowering it. Customers keep telling us it's "just the right sweetness and touch of lemon."
